Hye Cider Company is a cidery in the Texas Hill Country that specializes in cysers. A cyser is an apple cider brewed with honey and a higher alcohol tolerant yeast to produce what is technically a mead that has a high ABV and a dry and slightly tart flavor. Hye Cider Company produces cysers exclusively, being one of only two outfits in the country to do so.[1]
Founded in 2017 by Travis and Cherry Graham, Captain Brian Came, and Dominique Ransay, Hye Cider Company is located in Hye, Texas, halfway between Fredericksburg and Austin in a 800 square foot converted barn.[2]
Hye Cider Company has been the recipient of two awards from the Texas Mead Cup in 2019, the gold medal for Fruit Spice Mead with Hye Hops and the bronze medal in Cysers with Hye Note.[3] They mostly use local ingredients, including the honey, as well as capturing and filtering rainwater.[4]
