Giuseppe Citterio is an Italian company operating in the food sector. The company was established by Giuseppe Citterio in 1878 in Rho, Milan and is one of the oldest food industries in Italy. The company was initially started up to produce salame Milano, made to the recipe developed by its founder and destined for export to America. Giuseppe Citterio introduced a production process for salame that was different from the traditional method, which, until then, had followed a seasonal cycle. In fact, his insight was to make production continuous, through the introduction of cellars equipped with “sguass”, that is, vats made from cement that held ice accumulated during the winter months.
